Bitter Honey
Bitter Honey
We source our honey directly from our family-friend, Valerio Deidda, who has been producing high-quality raw honey in our town for decades. The strawberry tree blooms only a few months each year and yields scant nectar, making corbezzolo honey scarce and highly valued.
Corbezzolo has higher properties of Polyphenols and Flavonoids than Manuka honey and, according to studies, induces growth Inhibition of Human Colon Cancer Cells
This honey hits the palate with an initial hint of sweetness before revealing a pungent bitter bite, a hallmark of corbezzolo honey. The flavor is often described as earthy and herbaceous, with notes reminiscent of herbs, coffee, and a subtle smokiness.
Polyphenol & Flavonoids
Sardinian bitter honey contains both higher levels of polyphenols and Flavonoids than Manuka honey.
Proteins and Free Amino Acids
Corbezzolo honey also beats Manuka honey when it comes to Total Protein levels and Free Amino Acid Levels.
Antioxidant Levels
Corbezzolo honey was tested as having up to 5x more antioxidants than Manuka honey.
Traditional Beekeeping
Our bitter honey is sourced from Azienda Apistica Deidda Valerio, a small family-run apiary in our town Villacidro, Sardinia.
Native Flora
Bees forage freely in the untouched Villacidrese mountains, rich with wild strawberry trees (Arbutus unedo) and other native Sardinian plants.
Pure and Unfiltered
Collected without heat or industrial processing, this honey is raw, unfiltered, and packed at the source to preserve its natural enzymes and antioxidants.
As Seen on TV
Stanley Tucci's "Searching for Italy"
Corbezzolo honey caught the spotlight when Stanley Tucci tasted it on his Sardinian episode of Searching for Italy. Tucci sampled the rare bitter honey and was stunned by its intense, unexpected flavor. “It’s bitter, but I like it!” The moment showcased Sardinia’s deep-rooted food traditions and helped introduce the world to one of its most prized honeys.
